Just in Time for Thanksgiving: Ugandan Potatoes

This is a special recipe. Although it’s not a traditional Ugandan dish, this recipe was created for COTN by a culinary class at the Rosen College of Hospitality Management in Orlando, Florida, and designed around local, affordable ingredients that can be found in Uganda.
This recipe is part of a larger project in which Rosen students created more than 40 economical and tasty recipes for each of the five countries COTN serves. We'll talk more about that in a future blog post. Stay tuned!
I paired this dish with grilled chicken and steamed vegetables. It made for a delicious, healthy dinner. Side note: due to particular family palates, I did not use cilantro. However, I know the herb will add lovely color and depth to this recipe!
This recipe takes 10 minutes to prepare and 20 minutes to cook. It serves 8 people.
Ingredients
2 lbs red or white potatoes, peeled and diced
1 or 2 small to medium onions, diced
2 garlic cloves, crushed, minced
1/2 tsp tumeric
1/2 tsp chili pepper
1/2 tsp cilantro, fresh
1/2 tsp coriander
1/2 tsp cinnamon
1 tsp tomato paste
1/3 cup lemon juice, fresh or bottled
Vegetable oil for cooking onions

Instructions
1. Combine all dry spices in a bowl and blend well. Set aside.
2. Place potatoes in pan with 4 quarts of cold water, bring to boil. Boil for 9 minutes. Remove from heat and drain.
3. Heat sauté pan to medium heat. Add 2 tbsp oil and heat pan again to medium heat. Add onions.
4. Sauté onions until golden in color. Add garlic. After garlic has been added, cook for 30 seconds more.
5. Add spice mixture to onions and stir. Cook for about 2 to 3 minutes on medium-low heat.
6. Add lemon juice, tomato paste, and cilantro. Stir. Add salt to taste.
7. Add potatoes to sauce and stir, covering potatoes with sauce. Add water, covering bottom of pan, to loosen sauce mixture.
8. Cook for 10 to 15 minutes on medium-high heat, or until potatoes are moist and tender.
9. Enjoy!
