Fresh from the COTN Cookbook, this recipe has all the simplicity of a traditional casserole, but with a sweet Hispaniola twist!

The sweet potato (or batata) is a popular food with the many Haitian families who live in the Dominican Republic. Dominican sweet

potatoes are generally paler than those found in the U.S., but this recipe can be made with either kind (or even yams).


                                            

Sweet Potato Casserole


Preparation time: 30 minutes
Cooking time: 30 minutes
Serves: 12


4 sweet potatoes or yams

2 eggs
½ cup butter, softened
1 cup sugar
1 tablespoon vanilla

 

Directions

1. Preheat oven to 350 degrees (F)
2. Wash, peel, cube and boil sweet potatoes (or yams)
3. Drain the potatoes and place in a large mixing bowl
4. Add the eggs, butter, sugar and vanilla
5. Mix together using a hand mixer
6. Spread into greased 9x13 baking dish
7. Spread topping over casserole and bake until bubbly and golden brown (leave out pecans for tree-nut-free version)

 

Topping

1 ⅓ cups flour
½ to 1 cup chopped pecans (optional)
⅓ cup butter, softened
1 cup brown sugar

 

Directions

1. Mix together
2. Spread by dropping small spoonfuls over casserole
